New farm-to-table Moku Roots restaurant opens in Lahaina

New restaurant Moku Roots has opened in Lahaina, according to an announceme­nt.

It is a zero waste, farm-to-table, vegetarian/vegan restaurant, located at 335 Keawe St., No. 211. Its phone number is 214-5106 and website, www.mokuroots.com.

The restaurant uses papaya stems from its farm as straws, and all to-go food is wrapped in taro leaves.

“We are trying to inspire change within people and the restaurant community to be more mindful of waste by proving it’s possible to create amazing food without single-use plastics,” the announceme­nt says. “With this restaurant and our future restaurant­s, we are going to shift the paradigm of wastefulne­ss of the restaurant industry by proving it’s possible and setting an example for others to follow.

“Our ability to tweak everyone’s favorite recipes to featuring ulu and kalo and other locally grown produce in lieu of imported Mainland produce is also helping keep Maui dollars in Maui and helping maintain a vibrant local agricultur­e.”

Menu items include Maui-grown jackfruit pot stickers; gluten-free, vegan brownies; and a taro burger, the restaurant’s top seller.
