Former French Laundry baker opens One House Bakery in Benicia
One House Bakery experienced out-the-door lines during its first day of business.
One House Bakery opened Oct. 15 in Benicia, and it’s already creating a buzz in the East Bay bread world.
Owner-baker Hannalee Pervan is crafting original, fromscratch recipes of brioche, whole-grain ciabatta and country levain that she fine-tuned during her time in some prestigious kitchens, including The French Laundry.
Pervan and her team of bakers mill their own flour daily using a variety of whole-grain flours for pastries and breads and use only organic, farmfresh dairy. All of their breads are mixed, shaped and baked in-house using a variety of preferments and proofing temperatures to build the flavor of their bread.
The bakery features a comprehensive mix of sweet and savory, from five croissants to eight morning offerings, from laminated sticky buns to brown butter coffee cake, and puff pastry-wrapped moussaka to custard quiche. The list of pies, cookies, cakes and tarts is seasonal and extensive. Sightglass Coffee is a great match for them.
Then there’s the rest of the menu. Look for fresh-daily soups, including potato cream and green garlic asparagus, plus daily seasonal salads and, of course, sandwiches, like pork belly porchetta with salsa verde and a Roman pizza.
Pervan, a graduate of Ottawa’s Le Cordon Bleu, worked on both the pastry and bread sides at Bouchon Bakery in Yountville as well as on the team that baked the bread for Thomas Keller’s flagship restaurant, The French Laundry.
One House Bakery is currently in its soft opening with daily hours of 8 a.m. to 6 p.m. The bakery is located at 918 First St., Benicia. Go to www.
