French Onion Sheet Pan Chicken

Position a rack in the middle of the oven. Preheat oven to 450°F.

Ýbsp kosher salt, " tsp freshly ground black pepper and " tsp smoked paprika.

Ýhoroughly pat 3_ lb bone-in, skin-on chicken thighs dry. Lightly brush a large rimmed baking sheet with extra-virgin olive oil sprinkle generously with paprika miûture. Place chicken on baking sheet, skinside up brush with " Ýbsp olive oil. Ðenerously season chicken with remaining paprika miûture. Pour stock miûture around chicken ¤not on top¥. Roast chicken "minutes. àhile chicken is cooking, in a medium skillet, heat 1

Ýbsp olive oil and " Ýbsp unsalted butter over medium 6 | MARCH 12, 2023 until butter has melted. Add " large Vidalia onions, thinly sliced ¤about 1_ lb total¥, and 1 tsp granulated sugar. Season with a couple of generous pinches of salt, cover, and cook 15 minutes, stirring every 5 minutes and adíusting heat as needed to prevent onions from burning. Þncover and cook 5 minutes or until onions turn a beautiful light caramel color. Stir in leaves from 3 thyme sprigs; cook " minutes or until fragrant. Remove from heat set aside.

In a small bowl, combine 1\3 cup dry sherry, dry vermouth or white wine " Ýbsp Ĥnely chopped flat-leaf parsley and 4 cloves garlic, minced or Ĥnely grated. Remove chicken from oven evenly pour sherry miûture over thighs. Evenly divide carameliýe­d onions over each thigh, followed by & oý Gruyère cheese, shredded.

Return chicken to oven. Roast 15 minutes or until cheese has fully melted. Let rest for about 5 minutes. Serve garnished with parsley.
