RAISE A GLASS TO BEETS!
At Boardroom Spirits Distillery in Lansdale, the “beet” goes on with a specialty spirit dubbed “B” for beet. It’s “distilled from 100 percent raw red beets, which are all cleaned, processed, fermented and distilled in-house,” explained owner Marat Mamedov. “We try to be in the forefront of trends, and vegetable eau de vies or spirits are most certainly new to the United States,” he added. “Beets are a versatile vegetable with a naturally earthy flavor that deepens the flavor of the cocktails that it is worked into.” With its “subtle sweetness,” “B” stars in The Beetini, The ABC (apple, beet, cinnamon) and more.
The Beetini
This creation is savory, highlighting the beet and tomato flavors. Ingredients:
2 ounces Boardroom Vodka
1⁄2 ounce Boardroom Beet “B” specialty spirit
1 ounce beet kvass
1⁄2 ounce Bloody Mary mix Instructions In a cocktail shaker filled with ice, combine all ingredients and shake vigorously for 10 seconds. Strain into a chilled martini glass. Garnish with a pickled beet and serve. Note: Beet kvass is the tangy brine from fermented beets that’s sweet and full of probiotics from healthy lactobacillus bacteria.

The ABC (Apple, Beet, Cinnamon)
Beets and apples complement each other. This recipe uses the sweetness of the apple cider to draw out the sweetness of the “B.” Ingredients
1⁄2 ounce Boardroom Beet “B” specialty spirit
1 ounce Boardroom Vodka
4 ounces fresh apple cider Dash of cinnamon Apple slice for garnish
Instructions In a cocktail shaker filled with ice, combine all ingredients and shake vigorously for 10 seconds. Strain into a rocks glass, garnish with apple slice and serve.
