New coffee shop Nest opens at the Easton Public Market
Easton Public Market’s newest coffee vendor has taken flight.
Nest is open and welcoming customers, the second venture from Joseph Langdon and Jennifer Murray, owners of ThreeBirds Coffee House.
It’s also a gamble opening any business, especially a second — then add in the uncertainty of COVID-19 and the continuously changing Department of Health guidance and regulations.
They took the chance.
“We are betting on Easton,” Murray said. “It’s a safe bet. We are betting that when this all blows over, Easton will go back to normal.”
Nest replaces Fieldstone Roasters, which left the market earlier this year. It joins Saylors & Co., a new neighborhood butcher shop, as new vendors moving into the market in the past two months.
ThreeBirds Coffee House opened in May 2019 in what was once the Bull Mansion on Bushkill Street. The atmosphere is relaxed, with a “sit a while” vibe.
And of course, it offers an array of coffee drinks, as well as teas and gourmet lemonades.
Even though ThreeBirds is on nearby Buskhill Street, the owners knew their second venture had to also be in the city and had to be in the public market. As Murray sees it, the public market is an anchor of the downtown.
Nest offers many of the same drinks as ThreeBirds, but in a more streamlined setting. Think of it as a place to grab your coffee on your way to work or on your lunch break.
You’ll find an array of ground-to-order coffees sourced from Passenger Coffee & Tea in Lancaster, classic Italian-style espresso drinks, and a variety of cool drinks on tap.
Coffee: If you’re a coffee drinker, there’s plenty of interesting coffees and coffee styles to try, and they promise to have something new each time you come. In addition to a fresh-ground, fresh-brewed traditional cup of joe, using beans from Passenger Coffee & Tea, you can have an espresso, latte, cappuccino, cortado (espresso mixed with a drizzle of warm, steamed milk) and caffè mocha.
Non-coffee: Maybe coffee isn’t your thing. Nest offers cold brew iced tea, chai latte, matcha latte and more.
■ On tap: Nitro coffee and tea and other drinks are available on tap. (Nitro infuses a drink with nitrogen, giving it a creamy head of foam similar to draft beer). An interesting one to try: Nest’s nitro lemonade infused with hibiscus.
Nest is strictly drinks, however. If you need something sweet, you can stop at Modern Crumb bakery, which is right next door.
Nest also has some retail coffee and tea you can buy, as well as bespoke KeepCups and handmade teawares from China.
Murray said down the road, they plan to host educational sessions on coffee-processing techniques and farming practices, the history of tea and more, as well as host tastings in the market’s community room and kitchen.
Hours: 9 a.m. to 5 p.m. Wednesday through Sunday.
