How sweet it is

Owner of Cake Corner Bakery in Madison Township enjoys providing customers with tasty and high-quality items

Tina Wyatt always got plenty of compliment­s from friends and family about the delicious items that she baked at home.

But now, a much wider audience is getting a taste of Wyatt’s talent for turning out sweet treats such as cakes, pies, pastries and cookies.

That’s because she opened Cake Corner Bakery at 1955 Hubbard Road in Madison Township.

Wyatt said she had been keeping busy baking at home when she learned that retail space in the Chapeldale Plaza had become available for rent.

“I decided to give it a shot to see how (a bakery) would do as a commercial business,” she said.

So far, the chance that Wyatt decided to take has paid off. Since opening on March 16, Cake Corner Bakery has experience­d only several days during which it hasn’t sold out before the store’s scheduled closing time.

“We’re very appreciati­ve of the support we’ve gotten,” said Wyatt, who is a self-taught baker.

Wyatt strives to offer a different lineup of baked goods on every day that the business is open.

One of her top-selling creations is carrot cake.

“It’s very, very good,” Wyatt said. “Completely homemade, cream-cheese frosting, we shred the carrots.”

Another popular item is cassata cake, which is a white cake with strawberri­es, Bavarian cream and whipped-cream frosting.

“People go nuts for it,” Wyatt said, noting that she only sells it on Fridays.

Customers also have taken a strong liking to the bakery’s German chocolate cake.

And speaking of chocolate, people who can’t get enough of it might want to take home one of the bakery’s chocolate indulgence cakes. It consists of chocolate cake with chocolate frosting and chocolate ganache, a glaze made with a 1:1 ratio of heavy cream and chocolate; and is adorned with toppings that include Oreos; M&Ms, Hershey’s Kisses; and chocolate-covered pretzels.

Other items from recent daily menus at Cake Corner Bakery include loaded brownies; red velvet deluxe cupcakes; blueberry muffins; chocolate-chip cookies; extra-large butter croissants; almond bear claws; and white chocolate raspberry scones.

The best way to get a preview of Cake Corner Bakery’s menu on a given day is to check out the business’s Facebook page, Wyatt said. She also posts notices whenever the bakery sells out and will be closing up early.

Cake Corner Bakery’s regular hours are 10 a.m. to 6 p.m. or whenever the shop sells out on Tuesdays, Wednesdays and Fridays; and 10 a.m. to 4 p.m. or until sellout on Saturdays. The shop is closed the other days for baking. Tina Wyatt receives help in operating the bakery from her husband, Mike; and sons Michael and Zachary.

The Wyatts live in Madison Township, and she believes that Cake Corner Bakery is a nice addition to the community.

“We’re just a small walkin bakery and we’ll continue to do what we do well,” she said.
