GINGERBREAD PANCAKES

-

2 cups all-purpose flour 2 teaspoons baking powder

1 teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon 2 teaspoons ground ginger ¼ teaspoon ground cloves 1/3 cup molasses

2 eggs

1 cup sour cream

¼ cup melted butter 1 cup milk (plus more as needed for the right consistency — about 1 ½ cups)

In medium mixing bowl, mix together the flour, baking powder, baking soda, salt, and spices until well mixed.

In a large mixing bowl, combine molasses, eggs, sour cream, melted butter and 1-cup milk. Stir together and add the dry ingredients. Stir until well combined, adding more milk as needed. It’s all right if some small lumps remain. Cook on a very hot griddle and serve hot. — Melba
