DEAR MELBA: If you're having a Valentine's Day party, these hot cheese wafers would be a good choice.
HOT CHEESE WAFERS
•1 stick butter •1 package (4 ounces) sharp Cheddar cheese, grated •1 cup flour •1 cup Rice Krispies •1/2 teaspoon salt •1/2 teaspoon cayenne pepper, or to taste Heat oven to 350 F. In medium mixing bowl, mix butter and cheese. Add remaining ingredients. Form into small balls and press with thumb to flatten. Bake 20 minutes, or until barely brown around the edges. — Cora P.

DEAR MELBA: I love sweet potatoes and recently found a recipe similar to this one that I had clipped from The Oklahoman years ago.
MASHED SWEET POTATOES
•2 cans (16 ounces each) sweet potatoes •1/4 cup maple syrup •2 tablespoons butter or margarine •2 tablespoons orange juice •1/2 teaspoon salt •1/4 cup toasted chopped pecans, optional Drain sweet potatoes. In large saucepan, heat sweet potatoes until warm through. Remove from heat and beat until light and fluffy. Stir in syrup, butter, orange juice and salt. Transfer to serving dish and sprinkle with pecans, if using. Serves 8. — Helen F., Oklahoma City
