Churning out recipes

DEAR READERS: Last week, after announcing the winners of the Ice Cream Contest at the Oklahoma County Fair, I did not have enough space to share the recipes of two of the winners. One of the categories was Vanilla, and the first-place winner was Libby Riggins.

VANILLA ICE CREAM

• 1 3/4 cups whipping cream

• 3/4 cup sugar

• 1/8 teaspoon sea salt

• 1 1/4 cups whole milk

• 1 tablespoon vanilla

In medium saucepan, warm 1 cup of the cream, sugar and salt until the sugar dissolves. Remove from heat. Add remaining cream, milk and vanilla. Put in ice cream freezer container and freeze by freezer directions.

And Joseph Riggins won firstplace in the Chocolate With Other Ingredient­s category with his fresh mint dark chocolate ice cream.

FRESH MINT, DARK CHOCOLATE ICE CREAM

• 2 cups milk

• 2 cups whipping cream

• 1 cup fresh mint

• 1 cup sugar

• 7 large egg yolks, pasteurize­d

• 12 ounces finely chopped dark chocolate, melted

• 2 tablespoon­s coconut oil

In saucepan, heat milk and cream with mint. Cook 2 minutes. Strain and discard mint leaves. Add 2 tablespoon­s of the sugar to mixture and bring to a boil.

Whisk together egg yolks and remaining sugar. Add to saucepan and return to a boil. Stir in 2/3 of the chocolate.

Pour in ice cream freezer and chill. Add remaining melted chocolate and coconut oil and let blend briefly before freezing by freezer directions. — Melba

DEAR MELBA: In case no one entered an ice cream recipe similar to this in the County Fair winning recipes, they might want to save this one for serving at home.

CANDY BAR ICE CREAM

• 8 candy bars

• 1/2 cup chocolate chips

• 1 cup milk

• 2 cups sugar

• 6 eggs

• 2 tablespoon­s vanilla

• 1/2 teaspoon salt

In large saucepan, melt candy bars, chocolate chips and milk. In large mixing bowl, stir together sugar, evaporated milk, vanilla and salt.

Stir into hot mixture, and freeze by ice cream freezer directions.

DEAR MELBA: We are planning a Harvest Health Fair from 10 a.m. to noon Thursday at our senior living community. I was hoping you might be able to mention something about it in your column. We will have health vendors doing balance and fall tests, weights and blood pressure, annual wellness checks,

medication dispenser machines, chair massages, hot wax treatments, hearing screening, food demonstrat­ions from the new restaurant, Plant, and smoothies with Smoothie King.

We'll also have healthy treats for pets, a pharmacist speaking on medication­s and a dental speaker on oral care and the heart plus other organs. We will also have door prizes throughout the morning and gifts from each vendor. Everything is free. It will be in the Town Center at The Fountains @ Canterbury, 1404 NW 122, Oklahoma City.
