DEAR MELBA: I am going to test your memory. Do you remember the baked spinach spaghetti that was served at a local restaurant years ago? I remember ingredient­s included green olives. I would like to have a recipe, if anyone has it or anything similar. And I miss the old recipe man. He had good recipes.

I presume you are rememberin­g the late Dave Farrington. We're still sharing his recipes when someone shares them. The following is one of those remembered.

DEAR MELBA: Reading Dave Farrington's hot chicken salad in the paper recently, I remembered his potato chip chicken.

POTATO CHIP CHICKEN

• 2 cups crushed potato chips

• 1/4 teaspoon garlic salt

• 1 cup margarine, melted • 3 pounds skinless chicken pieces

Heat oven to 350 F. In large mixing bowl, mix crushed potato chips with garlic salt.

Melt margarine in large mixing bowl in microwave oven. Dip chicken in melted margarine and roll in crushed potato chips. Place on cookie sheet. Pour remaining margarine and chips over chicken. Bake 1 hour. Serves 4 to 6.

DEAR MELBA: Someone asked that you share some of the late Dave Farrington's recipes. This one is appropriat­e because it's time to start thinking of outdoor dining.

CUCUMBER CREAM CHEESE SANDWICHES

• 2 packages cream cheese • 2 teaspoons lemon juice • 1/4 teaspoon salt, approximat­ely

• teaspoon prepared horseradis­h

• 1/2 teaspoon hot sauce • 2 teaspoons minced onions

• 1/2 medium cucumber, chopped

• Sliced bread

In large mixing bowl, mix cream cheese, lemon juice, salt, horseradis­h and hot sauce. Add onion and cucumber and mix well. Cover and chill at least an hour before serving. To serve, spread thinly between two slices fresh bread. Cut into finger sandwiches to serve.
