For Floridians, every day can be Ice Cream Day. As temperatur­es rise, so do cravings for ice-cold sweets. Palm Beach County has plenty of options to cool you off, from gelato and frozen margaritas to popsicles and shakes.

This is where lawyer turned ice cream alchemist Rick Felberbaum combines flavors inspired by his stints in the kitchens of some of South Florida’s top chefs. The result is custardy ice cream in an eclectic range of flavors, like mascarpone and toasted nuts, cornbread and apple tatin, passion fruit and salted caramel, caramelize­d fig and pistachio. This spot is riding a hot newish dessert trend: rolled ice cream. The treat is made in the style of Thai “stir-fried” ice cream, scraped into rolls upon a freezing metal plate. The icy rolls are studded with various flavors (salty caramel, birthday cake, s’mores and more), then dressed with a choice of toppings (from roasted marshmallo­w to rainbow sprinkles).
