LATHAM, N.Y. » Following the acquisition of Roma Foods Importing Company this past spring, Cardona’s Market recently celebrated the grand re-opening of its new Latham store.

Located at 9 Cobbee Rd. in Latham, the former Roma market has been remodeled and is now operating under the Cardona’s banner.

Cardona’s Market is a three-generation, familyowned, Italian specialty market and caterer established more than 75 years ago.

An array of fine Italian import goods, restaurant-quality grab-and-go meals, artisan sandwiches and salads, homemade sauces, Cardona’s famous meatballs are now being offered within the Latham community.

The centerpiece of the newly revamped space is the signature Cardona’s hot table, featuring more than a dozen dishes which rotate daily, such as classic Italian family recipes as well as daily and seasonal specials.

There’s also a new soup station serving daily specials, including Cardona’s signature pasta fagioli.

Guests can pick up homemade Italian bread and baked goods too, including cookies, cakes, and desserts that are made in-house daily.

Additionally, the market has a full-scale commercial kitchen to accommodate catering orders and operations.

Founded by Augusto Cardona in October 1945, Cardona’s recently welcomed its third generation of family owners to carry on its tradition as a regional destination for fine Italian imports and traditional cooking. The new ownership team includes Anthony Cardona, August Cardona, Robert Cardona, Jr., T.J. Conti, and Kevin Garry.

“We are thrilled to celebrate the grand reopening of our newest location and excited to bring the quality and convenience of Cardona’s Market to the Latham community,” August Cardona said in a press release. “As a three-generation family-owned and operated business, we take pride in offering the finest products, fresh hand-crafted sandwiches, and authentic Italian dishes using our famous recipes that date back for generations. We are honored to have the opportunity to share our rich family traditions and menu offerings with our neighbors in the Latham community.”

Cardona’s Market celebrated the grand re-opening of the Latham store with an official “sandwich cutting” featuring a four-foot “Frank B.” sandwich, which is named in honor of Frank Bolognino, the second-generation owner of Roma Foods Importing Company along with his brothers John, Peter, and Paul.

The “Frank B.” — with imported prosciutto, fresh mozzarella, spinach, roasted red peppers, tomatoes, and extra virgin olive oil — will be a permanent and exclusive addition to the menu at the Latham market and pays tribute to the legacy of Roma Foods Importing Company, a fellow multi-generational, family-owned Italian food, and goods purveyor.

The Latham market will also offer a sandwich called the “Rabe C.,” which has been named in honor of Robert Cardona, Jr., the co-owner and executive chef at Cardona’s Market. The “Rabe C.” features fried eggplant, sharp provolone, hot pepper spread, broccoli rabe, and a balsamic glaze.

The sandwich will join several others available exclusively at the Latham market, including the ham and salami-based “Papa Muffaletta” and the all-new “Italian Cubano” featuring porchetta, hot soppressata, sliced fontina, spicy pickles, and dijon mustard.

Cardona’s Market has also created a brand-new chicken cutlet sandwich called “Cobbee Road,” which pays homage to the new location in Latham. The sandwich features chicken cutlet, smoked mozzarella, sundried tomato, caramelized onions, and pesto.

Local officials helped to celebrate the regional expansion of Cardona’s and its grand opening in Latham.

“Albany County residents know that if they want delicious Italian food from a local establishment, they can rely on Cardona’s every time, so to have another location in Latham is fantastic news,” Albany County Executive Daniel P. McCoy said in the release. “The pandemic has had a detrimental impact on the restaurants and hospitality industries, and Albany County government has worked tirelessly to ensure as many survived as possible. Seeing this familyowned market — and one of my personal favorites — expanding and building off of its success is nothing short of a breath of fresh air.”

Earlier this year, Cardona’s Market received special proclamations from the City of Albany and the Albany County Legislature in recognition of their 75 years of service to the Albany community.

With its acquisition of Roma Foods, Cardona’s also took over the company’s Saratoga Springs market, which has been operating under the Cardona’s banner since June and will undergo its own renovations with an anticipated grand re-opening in late spring 2022.

Cardona’s will continue to operate its original flagship storefront at 340 Delaware Ave. in Albany.

Current hours for the Cardona’s Market locations in Latham and Saratoga Springs are from 9 a.m. to 6 p.m. Monday through Saturday. The Latham market is also open on Sunday from 9 a.m. to 3 p.m. The Albany location is open Monday through Saturday from 8 a.m. to 7 p.m. Both the Albany and Saratoga Springs markets are closed on Sundays.
