Wisdom House to hold cooking demonstration
LITCHFIELD — A cooking demonstration, “The Envelope, Please: Cooking En Papillote,” will be offered at Wisdom House on Saturday, Jan. 12 from 2-3:30 p.m. Wisdom House Head Chef, Margaret Jacobs, will present the program.
In this class, participants will share the method and philosophy of cooking in an envelope of parchment paper. Food sealed in paper and cooked in its own juices yields a meal that is much more flavorful than ordinary steaming. This haute cuisine is ideal for healthy eating and can be accomplished by anyone.
Chef Jacobs, a graduate of the Culinary Institute of America, Hyde Park, New York, has more than 30 years of professional cooking and kitchen management experience. She has worked at the United Nations Plaza Hotel and as Executive Chef at EF Barrett & Co. in New York City. Prior to coming to Wisdom House, Jacobs owned Hannah’s Bakery and Catering of Torrington and Litchfield.
The cost for the program is $30. No experience is required and recipes and samples are provided.
