By Lauren Halligan SARATOGA SPRINGS, N.Y.» A Glens Falls barbecue business is expanding to the Spa City, with a second location opening soon.

Dizzy Chicken Wood Fired Rotisserie is slated to open an additional restaurant in coming weeks at 102 Congress St. in Saratoga Springs, the former site of Legends Cafe.

Owner Justin Bartlett, of Corinth, originally started the business two years ago on South Street in Glens Falls. There, the eatery offers unique barbecue cuisine in a casual setting, along with takeout and delivery.

After substantial growth in Glens Falls, “Now it’s time to get down to Saratoga and give it a run,” the Hudson Falls native said.

The new Saratoga Springs location is twice as large as the original restaurant at 2,000 square feet, and it will be more upscale with table service and a bar serving beer and wine.

A Culinary Institute of America grad, Chef Bartlett calls his Dizzy Chicken menu “barbecue with a twist.”

From breads to sauces, everything is made in-house, Bartlett said, “We don’t order anything in pre-prepared.”

In his recipes, Bartlett aims to use healthy ingredients such as olive oil and antibiotic-free, hormone-free, cage-free chicken.

Furthermore, instead of a standard gas rotisserie, Dizzy Chicken used a wood-burning rotisserie.

The Dizzy Chicken concept was originally inspired by a trip to Romania that Bartlett took with his wife. “They had chicken rotisseries on every corner, and they delivered,” he recalls. “We just kind of took that idea and then expanded on it.”

Bartlett believes that some of his business’ success comes from filling a niche in the local delivery food market. While there are plenty of area pizzerias and delis to order from, barbecue delivery is a bit more rare.

The Dizzy Chicken menu includes wings, soups, salads, paninis, grinders and wraps as well as entrees including whole and half rotisserie chickens, smoked meatloaf, St. Louis Ribs and Midnight Pork.

Renovations to the historic 1850s building are ongoing, but Bartlett expects to open the doors very soon.

Once in operation, the Saratoga Springs Dizzy Chicken Wood Fired Rotisserie will be open for lunch and dinner from 11 a.m. to 10 p.m Monday through Saturday.

This new location offers on-site parking for customers.

Bartlett’s goal for the entire Dizzy Chicken Wood Fired Rotisserie company is to open even more locations in the future. He said, “God-willing as it grows, we’ll grow with it.”
