The prominent New York cheesemong­er brings “vast knowledge and experience and zeal” to this primer, in which she identifies nine “gateway” cheeses—staples such as mozzarella, brie, and cheddar—that can open paths to less familiar varieties. Though long and occasional­ly marred by hipster jargon, “this book is a fine guide to expanding your repertoire.”
