Food truck offering breakfast bites

He wakes up very early for his new enterprise, but Matt Schmit says it's worth it because he wakes up smiling. His new business is The Main Bite, a breakfast food truck.

Schmit said he hasn't had a lot of experience as a chef, but, “if you care a little bit about what goes out that window, that's the secret.”

Everything that goes out the window at The Main Bite is fresh, he said. He makes it all in the trailer and doesn't hold anything overnight. Sometimes that means that the local emergency services gets a meal donated if he has prepped too many ingredient­s.

Schmit said his wife's family is in the restaurant business, so they helped design the business. He thinks the area in front of the Artist Retreat Center, just off of busy U.S. Highway 71, is a great location. Right now he's sharing it with another truck that serves lunch and dinner, but he's expecting a second breakfast truck to move in. He plans to work with all his neighbors and believes the more businesses in the area the more traffic will pull in.

While Schmit cooks, he has a wait staff of one taking orders and, occasional­ly, taking food out to parked cars.

His breakfasts are unique. Each customer chooses their own container for breakfast. While some people might choose a bowl, others will go with a taco shell or a burrito or even a quesadilla. For the inside of their container, they can choose bacon, sausage, chorizo or turkey bacon. Eggs, cheese and potatoes are included in each breakfast and add-ons ranging from vegetables to sauces are available.

He made sure his menu included commuter friendly, one-handed options like burritos. Breakfast bowls will probably be more popular among passengers.

Because all the orders are made fresh, there's usually about a four-minute wait, Schmit said, but if that's too long, customers are invited to text their orders and he'll have them waiting.
