Jalapeño Cornbread
Making it: The ingredients, including canned corn, pimentos and cornmeal, are easily found at the supermarket and easy to whip up. When I read that the recipe called for a cup of heavy cream, I was pleased. When I realized no sugar was called for, I was concerned. (But that is a personal bias, and technically there was sugar in the pickled jalapeños.)
Feedback: The cornbread, like all of the recipes we tested, went newsroom-wide. No surprise, the only major sticking point was sweetness, or lack thereof. Who knew there was such a sweet-vs.-savory war when it comes to cornbread? For savory fans, Gaines’ cornbread scored a thumbsup. Testers who preferred sweeter would add sugar. Most agreed the pickled jalapeños provided a nice kick.
