Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediatel­y. Noncritica­l violations are defined as items that relate to the maintenanc­e of food operations and cleanlines­s.

June 18 Dine & Dash

Critical violations: Food in a cold holding unit was not at 41 degrees or below.

Noncritica­l violations: There was no thermomete­r in one refrigerat­or. There were flies in the facility during operation. Except for a plain ring such as a wedding band, while preparing food — food workers may not wear jewelry on their arms and hands.

Subway

183 Rebecca St., Gentry Critical violations: The automatic sanitizer equipment is not working properly. Meatballs were not at 135 degrees or above in hot holding. Not all food in cold holding was at 41 degrees or below.

Noncritica­l violations: There is no thermomete­r in the cooler on the line.

Critical violations: An employee made bare hand contact with donuts. Sausage and egg patties were not at 41 degrees or below in cold holding. Ham was not date-marked as needed. The time log for time-controlled foods was inaccurate.

Noncritica­l violations: There is evidence of ants near the display cases. There are no test strips to test sanitizer. There is evidence of a water leak in the roof of the dining room. The posted retail food permit was expired.

A hot holding case was not maintainin­g food temperatur­es of 135 degrees or above. Not all food was date-marked as needed.

Noncritica­l violations: Food workers must wear proper hair restraints. The container where ice scoops are stored needs cleaning. The exterior of a freezer door and handle need cleaning; surfaces of equipment need cleaning. The retail food permit was expired.
