Heal your back with Marinated Onion Salad

Combining nutrient-dense onions, leafy greens and avocados makes for a delicious, healing dish that helps promote a pain-free back!

1/4 cup + 2 Tbs. red wine vinegar

2 Tbs. + 1/2 Tbs. sugar (or sweetener)

1/2 tsp. ground cumin

1/2 tsp. chili powder

1/4 tsp. salt

1 large onion, halved, thinly sliced

1/4 cup olive oil

2 Tbs. medium picante sauce

1 tsp. dried oregano

6 cups mixed salad greens

2 large tomatoes, halved, sliced

1 avocado, peeled, pitted, sliced

1/4 cup coarsely chopped fresh cilantro

1 or 2 small fresh chilies, sliced, optional 4 ripe olives

● Onions: In bowl, mix 1/4 cup vinegar and 2 Tbs. sugar with 1/4 cup water, cumin, chili powder and salt. Add onion; stir to coat. Cover; refrigerat­e overnight. Dressing: In lidded jar, combine oil, picante sauce and oregano with 2 Tbs. vinegar and 1/2 Tbs. sugar; cover and shake. Divide greens among 4 plates; top with tomato and avocado. Heap marinated onions in center of each plate. Top with cilantro, chilies and olives. Drizzle with dressing. Makes 4 servings.
