Fresh tomato keftedes (fritters)—cooked in fruity olive oil—are a deliciousl­y addictive Santorini specialty!

❑ 2 cups finely diced seeded peeled tomatoes ❑

1/2 cup finely chopped onion 1 Tbs. minced fresh basil

1 Tbs. minced fresh mint

1/2 tsp. salt

3/4 cup all-purpose flour

1/4 tsp. baking powder ❑

1/4 tsp. baking soda Olive oil Tzatziki sauce* Drain tomatoes on paper towels. In bowl, combine tomatoes, onion, basil, mint and salt. In separate bowl, mix flour, baking powder and baking soda; stir in tomato mixture. Coat bottom of large nonstick skillet with oil; heat over medium-high heat. Spoon batter into oil, making 3"-wide fritters. Cook 1-2 minutes on each side until golden brown. Transfer to paper towels to drain. Serve with tzatziki sauce. Makes 2-4 servings. *Tzatziki sauce (a yogurt-cucumber dip) is available in the dairy section of supermarke­ts, Whole Foods and Trader Joe’s.
