Gourmet French toast is popping up on menus across the country—and it’s easy to whip up at home for a memorable Mother’s Day brunch or to make any breakfast special! Just start with the basic recipe, then pick your favorite delicious fillings from food blogger Maria Lichty of Twopeasand­theirpod.com:

● Basic Stuffed French Toast: Whisk 3 eggs, 1 cup milk, 1 Tbs. melted butter, a dash of sugar and vanilla to make batter. Cut a loaf of bread like French or brioche into slices, spread with one of the fillings below, add another slice on top, then soak the sandwich in the batter. Cook on buttered skillet until golden brown!

● Chocolate Strawberry: Spread 2 brioche slices with chocolate hazelnut spread, top with strawberry slices. Top with 2 more brioche slices to form sandwiches. Soak in batter; cook in skillet. Top with sliced strawberri­es and whipped cream.

● Peaches-n-cream: In small bowl, mix 1/2 cup softened cream cheese, 1 Tbs. powdered sugar and 1/2 tsp. ground cinnamon until smooth. Spread cream cheese filling on 2 slices French bread; add 1/2 cup sliced peaches. Top with 2 more slices French bread to make sandwiches. Soak in batter, cook until golden brown. Top with peaches and maple syrup. ● Cannoli: In small bowl, combine 1 cup ricotta, 1/4 cup powdered sugar and 1/2 tsp. vanilla extract. Stir in 1/3 cup semi-sweet chocolate chips. Spread between 2 slices French bread, soak in batter, cook until golden brown. Top with powdered sugar.

● Berries and Brie: Make French toast using sliced brioche bread and batter above; cook until golden brown. When slightly cooled, spread one piece of French toast with 1 Tbs. raspberry jam, top with Brie slices, then place another piece of French toast on top. Return the “sandwich” to the pan, heat on low until cheese melts. Serve with berries, powdered sugar and syrup.
