Weber’s Ideal Cheeseburg­ers

Seasoned with fresh onion, Dijon and Worcesters­hire sauce, these better-thanthe-best burgers will be the hit of your gathering!

PATTIES 1 1/2 lbs. ground chuck (80% lean)

2 Tbs. minced onion

1 1/2 tsp. Dijon mustard

1/2 tsp. Worcesters­hire sauce

1/2 tsp. dried oregano

Ketchup Kosher salt

Freshly ground pepper

ASSEMBLY 2 Tbs. unsalted butter, softened

4 hamburger buns, split

4 slices aged Cheddar cheese, 8 oz.

4 leaves butter lettuce

16 dill pickle chips

Mix all patty ingredient­s, including 1 Tbs. ketchup, 1/2 tsp. salt and 1/4 tsp. pepper; gently form 4 patties of equal size, each about 1" thick. With thumb or back of spoon, make shallow indentatio­n about 1" wide in center of patties to prevent them from forming a dome as they cook. Refrigerat­e until ready to grill.

Prepare grill for direct cooking over medium-high heat (400°F to 500°F). l Season patties with salt and pepper. Grill over direct medium-high heat, with lid closed, until cooked to medium doneness (160°F), 9-11 minutes, turning once. Butter cut sides of buns. During last 30 seconds to 1 minute of grilling time, place 1 slice cheese on each patty to melt; toast buns, cut side down, over direct heat. Build each burger on bun with lettuce, patty, pickles and ketchup.

3/4 tsp. salt

1/4 tsp. pepper

4 lbs. pork spareribs

1/2 cup red pepper jelly

1/2 cup ketchup

1/4 cup light soy sauce

1/4 cup apple cider vinegar

2 Tbs. finely chopped peeled fresh ginger 1 Tbs. finely chopped garlic, 3 large cloves

Prepare grill for direct- and indirecthe­at cooking. Combine cumin, salt and pepper; rub over all sides of ribs. Place ribs meaty side down over direct heat on grill. Cover; cook until browned, 10-15 minutes. Turn ribs over; move to indirect heat. Cook, covered, until very tender, about 2 hours.

Meanwhile, combine red pepper jelly, ketchup, soy sauce, apple cider vinegar, ginger and garlic. Brush ribs with jelly mixture every 10 minutes during last 30 minutes of cooking time.
