Mint Julep Fruit Salad

This for-adults-only fruit salad is irresistible, thanks to an easy bourbon-mint syrup!

-

1 1/2 cups packed fresh mint leaves

1 cup sugar

3 Tbs. bourbon (1 1/2 oz.)

4 cups chopped seedless watermelon

(from 1 watermelon)

2 cups chopped fresh strawberries (about 12 oz.)

2 cups sliced peeled fresh peaches

(about 2 medium peaches)

1 cup fresh blueberries (about 6 oz.)

1 cup fresh raspberries (about 4 oz.)

Fresh mint, if desired

Bring mint, sugar and 1 cup water to boil in pot over medium-high, stirring until sugar has dissolved. Boil 2 minutes. Remove from heat; cool 20 minutes. Pour through fine wire-mesh strainer into bowl, pressing solids to release liquid. Discard solids. Stir together bourbon and 1/2 cup mint syrup in small bowl. Store remaining syrup in airtight container in refrigerator up to 2 weeks. Toss together watermelon, strawberries, peaches, blueberries and raspberries in large bowl. Pour bourbon mixture over fruit. Let stand 30 minutes before serving. Garnish with mint, if desired. Makes 10 servings.
