Maltese almond cookies melt in your mouth!

Crunchy on the outside and chewy on the inside, traditiona­l Maltese almond cookies ( biskuttini tal-lewz) taste especially delicious paired with a cup of tea! ❑ 2 cups almond flour ❑ 3/4 cup sugar ❑ 1/2 Tbs. fresh lemon juice ❑ 1 tsp. grated lemon zest ❑ 1 egg white ❑ 1/2 tsp. vanilla extract About 25 whole almonds Preheat oven to 350°F. Line baking sheet with parchment paper. In large bowl, combine flour, sugar, lemon juice, zest, egg white and vanilla; stir until blended. Roll dough into about 25 small balls. Use thumb to lightly press small indentatio­n into each ball; top with 1 almond. Place on baking sheet. Bake 10-12 minutes or until golden. Makes about 25 cookies.
