Bacon-wrapped Beef Filets

Smoky bacon adds extra-deliciousn­ess to lean ultra-tender steaks that cook up in a flash!

1/4 cup Pickapeppa sauce 1/4 cup ketchup 2 tsp. red wine vinegar 6 slices bacon 6 (1 1/2" thick) slices beef tenderloin (filet mignon),

each about 8 oz. 1/4 tsp. salt 1/4 tsp. pepper Wooden toothpicks

Preheat oven to 450°F. Mix Pickapeppa sauce, ketchup and vinegar; reserve. Line microwave- safe plate with paper towels. Place bacon in single layer on towels; cover with another layer of paper towels. Microwave on High in 15-second intervals until some of fat is rendered (do not overcook; bacon should stay pliable and not shrink too much). Cool.

Sprinkle beef with salt and pepper. Wrap 1 slice bacon around edge of each filet; secure with toothpicks. Heat large nonstick ovenproof skillet over medium-high heat. Working with 3 filets at a time, add beef, bacon edge down, to skillet. Using tongs, turn beef to cook bacon until it starts to brown, 5- 6 minutes. Transfer to plate; repeat with remaining filets.

Return beef to skillet, flat side down; cook, turning once, until just browned, 30 seconds per side. Discard pan drippings. Transfer skillet to oven. Roast filets 6-7 minutes for medium-rare.
