Buttery Curry-spiced Popcorn

Fiber in popcorn heightens blood-sugar control

2 Tbs. oil

1 tsp. curry powder

1⁄2 cup popcorn kernels

1 Tbs. butter, melted

1⁄2 tsp. salt 1⁄2 tsp. cracked black pepper

1⁄2 tsp. ground cumin

1 In large pot, heat oil over medium heat; add curry and popcorn. Cover, leaving lid slightly ajar; cook, shaking pot, until popping stops.

2 Transfer to bowl; drizzle with butter. Sprinkle with salt, pepper and cumin, tossing occasional­ly, until well coated. If desired, sprinkle with more curry. Serves 4
