Mouth-watering ox kidney stew

THIS is just a simple way, you can add carrots, peppers, beans or veggies of your choice.

Ingredient­s

1/2 cup diced red onions

1/2 cup diced leeks

Crushed ginger and garlic

Bay leaves

1 lemon

2 cups beef broth

1 tspn red chilli flakes

1 tbsn curry powder

1 tsp black pepper

2-3 tbsn coconut oil or vegetable oil lnstructio­ns

◆ Clean your kidneys, remove all the fat and the tissue (if not cleaned already).

◆ In a separate container, put two cups of water and one and a half teaspoons of salt, add half a lemon.

◆ Place kidneys in the salty water and put in the fridge for one hour, this will help tenderize your kidneys. ◆ Crush your garlic and ginger, dice your red onion, dice your leeks, add a table spoon of black pepper, table spoon of curry powder and a teaspoon of red chilli flakes.

◆ After one hour of your kidneys in salt water, take them out and cut them up into bite size, making sure you remove any excess fat still attached to the kidneys.

◆ In a baking tray or pot you can use in an oven, put your kidneys and all your spices in, followed by onions, garlic, leeks and two tablespoon­s of cooking oil, mix. Massage with your hands.

◆ When thoroughly mixed, add two cups of beef stock and cover with a foil paper and bake in the oven for a hour at 180 degrees Celsius

◆ After an hour, remove the kidneys from the oven and separate from the liquid, set the liquid aside.

◆ Put the kidneys in a separate pan

and put on stove top on low heat. ◆ Add tomato paste, a splash of soy

sauce and a splash of lemon.

◆ Stir gently until everything is mixed

well, do not crush the tender kidneys. ◆ Add the liquid back to the pan and thicken it with gravy or add cornstach if you like.

◆ Let it simmer for 15 mins, taste for

salt and add if necessary.

◆ Serve with your favourite starch.
