Nigella’s courgette & chickpea filo pie
“We don’t do pies in Iran. The closest dish is baked tachin, with its crisp, golden rice casing. However, I do love Nigella Lawson’s Iranian-inspired pie of buttery ilo pastry illed with cumin and turmericspiced rice, chickpeas and courgettes. It goes down a storm at parties. To me, it’s reminiscent of the Greek classic, spanakopita, where feta and spinach is served in a ilo pie or baked ilo parcels. My pastry chef friend,
