Ethiopia’s food has fairly decent representa­tion in the UK, though I’d argue nowhere near enough for how good it is – and now we get a closer glimpse into the regional variation of the country’s northernmo­st state, Tigray, with Tekebash & Saba: recipes from the Horn of Africa.

Tekebash Gebre was born in Tigray under the rule of the last Ethiopian emperor, and lived under a community regime before fleeing to Sudan, where her daughter Saba Alemayoh was born.

The dishes include birsen, a split red lentil stew, and kulwa be merek, a beef stir-fry. Other recipes reflect stages of Tekebash’s life and the journey from Tigray to Australia, where she eventually settled.
