OPEN-FACE PEAR AND HAM CIABATTA

SERVES 4 (AS A LIGHT MEAL)
2 x 80g ciabatta rolls, split in half Cooking spray
3 Tbsp 97 per cent fatfree mayonnaise
1 Tbsp shredded basil
1 tsp fresh lemon juice
1 cup rocket leaves
1 tsp white wine vinegar or
apple cider vinegar
125g thinly sliced saltreduced ham
2 pears, unpeeled, quartered,
core removed, sliced
1/4 small red onion, thinly sliced 20g parmesan shavings
1 Preheat a grill on medium.
Place the rolls, cut-side up, on a baking tray and spray with cooking spray. Cook under the grill for 1-2 minutes or until toasted.
2 Combine the mayonnaise, basil and lemon juice in a small bowl. Spread over the rolls. Toss the rocket and vinegar in a small bowl. 3 Top the rolls with the ham, pear, rocket, onion and parmesan. Serve.
