BLACK BEAN TOSTADAS

SERVES 2 (AS A LIGHT MEAL)
4 Mission White Corn Tortillas 270g (1 cup) canned black beans,
rinsed and drained
4 Tbsp mild salsa or gluten
free salsa
½ tsp ground cumin
1/2 small avocado, mashed
until smooth
1 tsp fresh lemon juice
Freshly ground black pepper 1 cup chopped iceberg lettuce 1 small tomato, chopped
1 green shallot, diagonally sliced 1 Preheat oven to 200°C (fan-forced). Line a small tray with baking paper. Spray the tortillas with cooking spray. Bake for 8-10 minutes or until slightly crisp.
2 Meanwhile, put the beans, salsa and cumin in a small saucepan. Stir over low heat, mashing up slightly, until warmed through.
3 Divide bean mixture evenly between the tortillas. Mix avocado, lemon juice and pepper in small bowl. Spoon over bean mixture. Top with lettuce, tomato and shallot.
