SALMON AND BROCCOLI

PREP TIME: 10 MINS COOK TIME: 20 MINS SERVES 4 (AS A MAIN)

4 x 150g pieces boneless salmon

fillets (with skin on)

1 large head (400g) broccoli,

cut into florets

Juice of 1 lemon

1 small lemon, quartered

Small bunch green shallots, sliced 1 tsp extra virgin olive oil

2 Tbsp salt-reduced soy sauce or

gluten-free soy sauce

Green beans and radishes, to serve

(see recipe below)

1 Preheat oven to 160°C (fanforced). Line a large roasting pan with baking paper. Place the salmon in the roasting pan.

Wash and drain the broccoli and place around the salmon. Pour the lemon juice over and then add lemon quarters to the pan.

2 Top salmon and broccoli with half the shallots. Drizzle with olive oil. Roast for 10 minutes. Sprinkle with the soy sauce and bake for a further 4 minutes, or until the salmon is cooked through.

3 Sprinkle the salmon and broccoli with the remaining shallots. Serve with Green beans and radishes.
