Cheers to summer!
In a cocktail shaker combine five 3mm-thick slices fresh ginger and two 6mm-thick slices rhubarb. Crush against side with a muddler or back of spoon. Add 30ml vodka, 2 Tbsp Rhubarb Syrup (recipe, below), and 1 tsp fresh lime juice. Add ice cubes, cover and shake until very cold. Strain through a small fine-mesh sieve into a tall ice-filled glass. Add
60ml (¼ cup) chilled soda water. Garnish with a lime slice and/or rhubarb swizzle stick. Makes 1 drink.
In a small saucepan combine 310ml (1¼ cups) water, 115g (1 cup) 6mmthick slices rhubarb and 60g (¼ cup) sugar. Bring to boil then reduce heat. Simmer for 6 minutes or until rhubarb breaks down when stirred. Strain through a finemesh sieve and discard solids. Makes 310ml
