Rhubarb cock­tail

RHUBARB COCK­TAIL

In a cock­tail shaker com­bine five 3mm-thick slices fresh gin­ger and two 6mm-thick slices rhubarb. Crush against side with a mud­dler or back of spoon. Add 30ml vodka, 2 Tbsp Rhubarb Syrup (recipe, be­low), and 1 tsp fresh lime juice. Add ice cubes, cover and shake un­til very cold. Strain through a small fine-mesh sieve into a tall ice-filled glass. Add

60ml (¼ cup) chilled soda wa­ter. Gar­nish with a lime slice and/or rhubarb swiz­zle stick. Makes 1 drink.

RHUBARB SYRUP

In a small saucepan com­bine 310ml (1¼ cups) wa­ter, 115g (1 cup) 6mmthick slices rhubarb and 60g (¼ cup) sugar. Bring to boil then re­duce heat. Sim­mer for 6 min­utes or un­til rhubarb breaks down when stirred. Strain through a finemesh sieve and dis­card solids. Makes 310ml

(1¼ cups).
