AVOCADO WITH SOY & GINGER DRESSING

Mix a small grated clove garlic and 1/2 tsp finely grated ginger with 1 tsp salt-reduced soy sauce or gluten-free soy sauce and 2 tsp fresh lemon juice in a small bowl. Stir in 1-2 tsp water. Cut a small avocado in half and de-stone. Spoon in the dressing and eat with a teaspoon. Serves 2.
