CIN­NA­MON CASHEW SPREAD WITH AP­PLE SLICES

Pour enough boil­ing wa­ter over 50g un­roasted cashew nuts in a small bowl to cover. Set aside for 2-3 min­utes to soften a lit­tle. Drain and re­turn to the bowl.

Add 1 Tbsp canola oil and 1/2 tsp ground cin­na­mon. Blitz with a stick blender to chop the nuts into a rough paste. Serve with 2 ap­ples sliced straight across into rounds and 2 lemon wedges for squeez­ing over. Serves 4.
