CINNAMON CASHEW SPREAD WITH APPLE SLICES
Pour enough boiling water over 50g unroasted cashew nuts in a small bowl to cover. Set aside for 2-3 minutes to soften a little. Drain and return to the bowl.
Add 1 Tbsp canola oil and 1/2 tsp ground cinnamon. Blitz with a stick blender to chop the nuts into a rough paste. Serve with 2 apples sliced straight across into rounds and 2 lemon wedges for squeezing over. Serves 4.
