SPICY CHICKEN & AVOCADO WRAPS
PREP TIME: 10 MINS COOK TIME: 10 MINS SERVES 2 (AS A MAIN)
250g skinless chicken breast fillet, trimmed of fat, thinly diagonally sliced
Generous squeeze lime juice
1⁄4 tsp chilli powder
1 clove garlic, chopped
1 tsp olive oil
½ avocado, halved, stone removed 2 (45g each) Woolworths Mixed
Grain Wraps or gluten-free wraps 1 drained roasted red capsicum in vinegar, patted dry with paper towel, thinly sliced
1⁄4 cup coriander leaves, chopped
1 Combine the chicken, lime juice, chilli powder and garlic.
2 Heat oil in large non-stick frying pan over a high heat. Add chicken and cook, stirring often, for 3-4 minutes or until chicken is cooked through. Transfer to a plate, cover loosely with foil and set aside.
3 Mash avocado and spread over wraps. Top with pepper strips and chicken. Sprinkle over coriander. Roll up wraps, cut in half and serve.
