VIR­GIN STRAW­BERRY MOSCOW MULE

PREP TIME: 20 MINS SERVES 8 (AS A DRINK)

2 x 250g pun­nets straw­ber­ries,

hulled, halved

60ml (1⁄4 cup) fresh lime juice 1.5L (6 cups) chilled diet

gin­ger ale

Crushed ice, to serve

1/2 cup loosely packed small

basil leaves

8 thin slices gin­ger

1 Put the straw­ber­ries, lime juice and 125ml (1/2 cup) of the gin­ger ale in a blender or food pro­ces­sor. Cover and process un­til smooth. Strain, if de­sired. 2 Trans­fer the straw­berry mix­ture to a large jug. Slowly pour in the re­main­ing gin­ger ale. Stir gen­tly.

3 Fill 8 glasses with crushed ice. Di­vide the basil and gin­ger be­tween serv­ing glasses. Pour in the straw­berry mix­ture.

COOK’S TIP

To pre­pare with al­co­hol, add 2 Tbsp vodka or light rum to each serv­ing.
