VIRGIN STRAWBERRY MOSCOW MULE

PREP TIME: 20 MINS SERVES 8 (AS A DRINK)

2 x 250g punnets strawberri­es,

hulled, halved

60ml (1⁄4 cup) fresh lime juice 1.5L (6 cups) chilled diet

ginger ale

Crushed ice, to serve

1/2 cup loosely packed small

basil leaves

8 thin slices ginger

1 Put the strawberri­es, lime juice and 125ml (1/2 cup) of the ginger ale in a blender or food processor. Cover and process until smooth. Strain, if desired. 2 Transfer the strawberry mixture to a large jug. Slowly pour in the remaining ginger ale. Stir gently.

3 Fill 8 glasses with crushed ice. Divide the basil and ginger between serving glasses. Pour in the strawberry mixture.

COOK’S TIP

To prepare with alcohol, add 2 Tbsp vodka or light rum to each serving.
