SERVES 8 (AS AN OC­CA­SIONAL DRINK)

60ml (1⁄4 cup) fresh lemon juice 2 Tbsp honey

1½ cups blue­ber­ries

250ml (1 cup) gin

1.75L (7 cups) chilled soda wa­ter Crushed ice, to serve

8 lemon wedges, to serve

1 Com­bine the lemon juice, honey and 1 cup of the blue­ber­ries in a large glass mea­sur­ing jug.

Use the back of a spoon to gen­tly bruise the blue­ber­ries against the side of the jug.

2 Stir the gin into the blue­berry mix­ture. Strain the mix­ture through a fine-mesh sieve into a large jug. Slowly pour in the soda wa­ter. Stir gen­tly.

3 Serve in glasses with crushed ice. Add the re­main­ing blue­ber­ries, and lemon wedges, to the glasses.
