BLUEBERRY TOM COLLINS

SERVES 8 (AS AN OCCASIONAL DRINK)

60ml (1⁄4 cup) fresh lemon juice 2 Tbsp honey

1½ cups blueberrie­s

250ml (1 cup) gin

1.75L (7 cups) chilled soda water Crushed ice, to serve

8 lemon wedges, to serve

1 Combine the lemon juice, honey and 1 cup of the blueberrie­s in a large glass measuring jug.

Use the back of a spoon to gently bruise the blueberrie­s against the side of the jug.

2 Stir the gin into the blueberry mixture. Strain the mixture through a fine-mesh sieve into a large jug. Slowly pour in the soda water. Stir gently.

3 Serve in glasses with crushed ice. Add the remaining blueberrie­s, and lemon wedges, to the glasses.
