SESAME SUGAR SNAPS
PREP TIME: 5 MINS COOK TIME: 5 MINS SERVES 4 (AS A SIDE)
3 tsp salt-reduced or gluten-free
soy sauce
2 cloves garlic, crushed
1 tsp finely grated ginger
3 tsp toasted sesame oil
450g sugar snap peas, trimmed 1 cup shredded carrot
1 tsp sesame seeds, to serve
1 Whisk the soy sauce, garlic, ginger and 1 tsp of the oil in a small bowl. Set aside.
2 Heat a large heavy-based frying pan over medium-high heat. Add the sugar snap peas and remaining oil. Toss to coat. Cook, stirring occasionally, for 3-4 minutes or until the skins start to blister. Add the carrot and cook, stirring, for 1 minute. 3 Drizzle soy dressing over the vegetables in the pan. Cook, stirring, until heated through. Sprinkle with sesame seeds before serving.
