SESAME SUGAR SNAPS

PREP TIME: 5 MINS COOK TIME: 5 MINS SERVES 4 (AS A SIDE)

3 tsp salt-re­duced or gluten-free

soy sauce

2 cloves gar­lic, crushed

1 tsp finely grated gin­ger

3 tsp toasted sesame oil

450g sugar snap peas, trimmed 1 cup shred­ded car­rot

1 tsp sesame seeds, to serve

1 Whisk the soy sauce, gar­lic, gin­ger and 1 tsp of the oil in a small bowl. Set aside.

2 Heat a large heavy-based fry­ing pan over medium-high heat. Add the sugar snap peas and re­main­ing oil. Toss to coat. Cook, stir­ring oc­ca­sion­ally, for 3-4 min­utes or un­til the skins start to blis­ter. Add the car­rot and cook, stir­ring, for 1 minute. 3 Driz­zle soy dress­ing over the veg­eta­bles in the pan. Cook, stir­ring, un­til heated through. Sprin­kle with sesame seeds be­fore serv­ing.
