MARMALADE PORK
PREP TIME: 5 MINS COOK TIME: 15 MINS SERVES 4 (AS A MAIN)
1 Tbsp olive oil
2 cloves garlic, sliced
4 x 125g pork steaks, trimmed
of fat
Freshly ground black pepper 200ml hot gluten-free,
salt-reduced stock
4 tbsp chunky marmalade
1 Tbsp thyme leaves
300g baby Spud Lite potatoes,
halved, steamed, to serve 300g (2 cups) frozen peas,
steamed, to serve
200g broccoli, steamed, to serve
1 Heat oil in a large non-stick frying pan over medium-high heat. Add garlic and cook, stirring, for 30 seconds. Add pork to pan and season with pepper. Cook for 2-3 minutes each side, or until cooked through. Transfer pork to a plate, cover loosely with foil and set aside.
2 Add combined stock, marmalade and thyme to pan. Cook, stirring, for 1-2 minutes or until mixture bubbles and is well combined. Return pork to pan and coat in sauce. Serve marmalade pork with steamed vegetables.
