AVOCADO, CHICKEN AND TOMATO ON TOAST

SERVES 2 (AS A BREAKFAST)
1 tsp olive oil
100g skinless chicken breast fillet, trimmed of fat, cut lengthways into thin pieces
3 small roma tomatoes, halved 2 slices wholegrain bread
1 tsp English mustard
1 small ripe avocado, peeled and
halved
60g rocket leaves
1 Heat the oil in a large non-stick frying pan over medium heat. Add the chicken and tomato and cook for 2 minutes each side or until chicken is cooked through and tomato softens.
2 Meanwhile, toast the bread, spread with mustard and squash half an avocado on each slice. Top with the chicken, tomato and rocket. Serve.
