QUINOA, SALMON & BROCCOLI SALAD

Follow the recipe (left) but omit pumpkin, feta and pumpkin seeds. Reduce quinoa to 100g. Blanch the broccoli and then toss into the salad with a good handful of baby spinach leaves and 100g cooked and flaked salmon. Serves 2 (as a light meal).
