SALSA SPAGHETTI WITH SARDINES
PREP TIME: 15 MINS COOK TIME: 15 MINS SERVES 2 (AS A MAIN)
100g wholemeal spaghetti or
gluten-free pasta
2 large ripe tomatoes, finely
chopped
1 red onion, very finely chopped 8 pitted Kalamata olives, quartered 1/2 tsp finely chopped red chilli
Zest and juice of 1/2 a lemon
1/2 cup small basil leaves
2 x 125g cans sardines in olive oil,
drained, oil reserved
Freshly ground black pepper
1 Cook the spaghetti in a medium saucepan of boiling water, following packet directions, until al dente.
2 Meanwhile, combine tomato, onion, olives, chilli, lemon zest and basil in a bowl. Put sardines in a small non-stick frying pan and cook over medium heat for 2-3 minutes, or until heated through.
3 Drain pasta, returning it to pan. Add tomato mixture to pasta and toss to combine. Add the sardines and toss gently to combine. Season with lemon juice, pepper and a little oil from the can.
