AVOCADO BLACK BEAN EGGS

PREP TIME: 5 MINS

COOK TIME: 5 MINS

SERVES 2 AS A BREAKFAST OR LIGHT MEAL

2 tsp olive oil

1 red chilli, deseeded and thinly sliced

1 large clove garlic, sliced

2 x 60g eggs

400g can no-added-salt black beans, undrained

200g cherry tomatoes

¼ tsp cumin seeds

1 small avocado, halved, sliced Handful chopped coriander 1 lime, cut into wedges

1 Heat oil in a large non-stick frying pan over medium heat. Add chilli and garlic. Cook until softened and starting to colour. Break in eggs on either side of pan. Once they begin to set, spoon black beans with their juice and the tomatoes around the pan. Sprinkle over cumin. Cook for 2-3 minutes, or until eggs are just set and beans and tomatoes are heated through.

2 Remove pan from heat. Scatter over avocado slices and coriander. Squeeze over half the lime wedges. Serve with remaining wedges on the side for squeezing over.
