LOWER CARB SNACKS

Avoid 3.30-itis with these quick, easy, lower-carb and low GI snacks using the humble chickpea

BASIC CURRIED ROAST CHICKPEAS

PREP 5 MINS COOK 20 MINS

SERVES 10 AS A SNACK

2 x 420g cans no-added salt

chickpeas

1½ Tbsp olive oil

1 tsp caraway seeds

1 tsp mustard seeds

Freshly ground black pepper 1 Tbsp curry powder

or gluten-free curry powder

1 Preheat oven to 180°C (fanforced). Drain the chickpeas and pat dry with a tea towel to remove as much moisture as possible.

2 Tip the chickpeas onto a roasting tray. Drizzle over the oil, caraway seeds, mustard seeds and pepper. Toss to combine. Roast for 20 minutes or until the chickpeas are golden brown.

3 Add the curry powder to the chickpeas and toss to combine.

CURRY LEAF POPCORN

SERVES 1 AS A SNACK

Mix 80g curried chickpeas with a handful of lightly salted popcorn, a few fresh curry leaves and 1 tsp curry powder or gluten-free curry powder. Fry the mixture in ½ tsp olive oil, cool slightly and dig in.

CHICKPEA BOMBAY MIX

SERVES 1 AS A SNACK

Mix 60g curried chickpeas with

1 Tbsp unsalted peanuts. Spread over a small baking tray and bake in oven preheated to 180°C (fan-forced) for 10 minutes.

Mix with 1 tsp raisins.

CURRIED HUMMUS

SERVES 1 AS A SNACK

Use a hand held blender or small food processor to blitz 60g curried chickpeas with the juice of ½ lime, 2 tsp tahini, and a handful of coriander leaves, adding enough water until you get to your desired consistenc­y. Season to taste with pepper. Serve with ½ small cucumber & half a small carrot, cut into sticks.
