Pistachio Toffee Shards (gf)

EQUIPMENT:

1 cup caster sugar ¼ cup water

Line a baking tray with baking paper.

Stir the water and sugar together in a medium saucepan over a low heat until the sugar dissolves. To dissolve any sugar left on the side of the pan, brush down with a wet pastry brush. Don't bring it to the boil until all the sugar is dissolved.

Increase the heat to high and bring to boil. Cook until the syrup is a rich golden colour, swirling the pan for even browning. Tip onto the prepared baking tray, tilt to make an even layer then sprinkle over the pistachio nuts. When set, break into shards.

2 tablespoon­s chopped pistachio nuts
