What have you learned the hard way when it comes to cellaring?
I’ve got three rules, all learned the hard way! Don’t wait for an occasion to open a special bottle – make opening the bottle the occasion. Don’t leave old wines too long in the decanter before serving or you’ll miss them at their best. And don’t cellar wines too long.
