What do you believe makes this style of wine so enticing?
Right from the start we knew this vineyard site was yet to reach its true potential, so with careful fruit selection, we knew we could come up with a great chardonnay. People say great wines are made in the vineyard and this is true, but with chardonnay, it’s very much a joint effort by what’s given in the vineyard and what we do in the winery. A little extra work and the rewards will come for our chardonnays. For a food pairing, I like to keep it simple with some lightly fried butterflied garfish on sourdough. Perfect!
