Whole-bunch pressed, only the free-run juice used, full barrel fermentation, 8 months maturation, best 10 barrels selected for the final blend. Pulls out all the stops with a richly textured ode to Margaret River’s Gin Gin clone of chardonnay: forward, expressive with evocative oyster shell/rock pool/salinity. Ostensibly, chamomile, peach and nectarine, beachy. Roasted almond, cashew, nashi pear and honeyed textural palate. Oak not totally absorbed. Big and beautiful. JP 13.5% alc.
