Bincho Boss was inspired by the vibrant alleyways of Tokyo.

A modern Japanese eatery, Bincho Boss, has opened on Little Bourke Street in Melbourne. Serving up izakaya-style dishes presented in a refined, contempora­ry way using seasonal Australian produce, the menu has been carefully curated by executive chef Tomotaka Ishizuka (Koko, Ishizuka) and head chef Keiji Ishida (Kisume).

Many of Bincho Boss’ signature dishes are cooked on an earthen konro grill over a traditiona­l binchōtan – a high-quality white charcoal used in Japanese cooking. Menu highlights include charcoal-grilled wagyu beef in salt crust with soy wasabi; house-made fresh tofu; and soy ginger-flavoured chicken karaage with lemon and mayo. On the drinks menu, there’s a range of Japanese-inspired cocktails including Sake Negroni, a Matcha Highball, an Okinawa Sling and an Oriental Sour.

While the name, Bincho Boss, was born from the way the signature dishes are cooked over a traditiona­l binchōtan, the inspiratio­n behind it was taken from the vibrant yokochos (alleyways) of Tokyo. binchoboss.com.au
